A kilowatt-hour (kWh) is a unit of energy, the same 'unit' as on your electricity bill. An EV's battery size in kWh tells you how much energy it stores: more kWh usually means more range, and filling a 40 kWh battery from empty takes a little over 40 units because some energy is lost while charging.
